Now that I’m pregnant, I have to be a little more tame with my treats. Let’s see… what can I snack on that has chocolate in it, only 150 calories, is full of protein and potassium, and even has some calcium, iron, and other vitamins…
Oh! And it can’t taste like cardboard!
Oh yes, friends. CHOCOLATE SOY MILK.
Do not turn up your nose just yet! Silk Chocolate Soy milk tastes zero like actual soy milk. It’s creamier than regular milk, almost like a thin version of a milkshake, and it’s SO good for you… especially compared to well… anything else that’s chocolate. It tastes similar to regular chocolate milk, besides texture.
I get it in these little individual packs. It can be kinda expensive, so consider it a dessert for the most part, but it’s worth every penny.
Mmmmm…. I would tell you about this one time I was vegetarian and over-dosed on soy products, but it would definitely kill the buzz of the blog post. Another day… go enjoy some chocolate soy milk for now
Sorry it has been so long, lovelies! I found out I was pregnant back in October, and all my priorities have been a little crazy since then. But I’m happy to announce that I’m back in action! And as a “come back” I thought I would introduce you to this yummy stuff for the holidays:

I used cherry chocolate chips to spice up the red velvet cake, but they all sunk to the bottom. My friends informed me to cut them in flour next time & they’ll stay mixed up in the batter, better.

Does anyone really get sick of Halloween cupcakes? I don’t! I could look at them all day, because Halloween happens to be one of my favorite holidays. B & I have been counting down (on our fridge) the days until Halloween so we can dress up, hand out candy, and party! Ow ow!
Picture this. You wake up. It’s cold outside. You want to grab a cup of coffee…
STOP!
How about grabbing a cupcake, instead? With some coffee-flavored frosting perhaps?
Coffee Frosting with Starbucks Via
2 packets starbucks via columbia
3/4 cup coffee flavored liqueur
4 large egg whites
1 1/2 cups sugar
3 sticks unsalted butter, room temperature
In a small bowl, combine the starbucks via with the coffee liqueur and stir until disolved, set aside. in a heatproof bowl set over a pan of simmering water, whisk together the egg whites and sugar until the sugar is dissolved, and the mixture is warm to the touch, about 2-3 minutes.
In the bowl of an electric mixer fitted with the whisk, beat the egg white/sugar mixture on high speed until sift peaks have formed, about 6 minutes.
Switch to the paddle attachment and with the mixture on medium to low speed, add the butter a few tablespoons at a time. beating well after each addition. continue beating until smooth and fluffy. {the frosting might appear to separate but keep beating until smooth.} with the mixer on low speed, add the coffee and liqueur mixture until smooth. {again the frosting might appear to separate, especially at this addition, but keep beating until smooth.} beat on the lowest speed to remove any air bubbles, about 2 minutes.
I feel like I’m getting better at making cupcakes, finding my style, and just loving doing it. I’m thinking about starting to charge, just for ingredients, because I love baking cupcakes soooo much, but it can get rather expensive. I’m doing Halloween cupcakes not this weekend, but next, and then I’ll probably quit for a while unless I’m getting paid. Haha. I don’t want to break our bank because I’m buying so much powdered sugar…
